There are desserts and then there are desserts. But there is simply no comparison with Aate ka halwa. Made from the simplest of Indian pantry items, it has a clean flavour that bowls me every time!
So if I am ever craving something sweet, Aate ka Halwa always comes to the rescue.
Aate ka Halwa, Dessert for the Soul

1 cup Wheat flour aka Aata (coarser the better)
1 cup Ghee (don’t compromise on this and I promise this will be the best halwa ever!)
1 cup Sugar
4 Green cardamoms
2 teaspoons Almonds, slivered
2 teaspoons Raisins
3 cups of Boiling water
1. In a non-stick pan, melt the ghee and add green cardamoms and wheat flour to it. Cook the three on low flame, stirring constantly until the flour starts turn brown and fragrant. Be careful not to burn the flour.
2. Add the almonds and raisins.
3. Add the sugar and take the pan off flame. Now, gently pour in the boiling water. Stir briskly so that no lumps are formed. Cook the halwa for a minute or two until glossy and starts to leave the sides. Enjoy warm. Stores well in the fridge for up to 7 days!
